Pumpkin Pie Chia Pudding (5 Minutes, No Bake)
All the flavor of pumpkin pie in a jar. Stir it together in five minutes, chill, and it sets into a creamy pudding. It works as dessert, and just as well for breakfast.
The recipe
Time: 5 min + 2 hr chill Makes: 3 servings
You need
1 cup canned pumpkin purée (not pie filling)
1 1/4 cups unsweetened plant milk
1/4 cup chia seeds
2 tbsp maple syrup
1 1/2 tsp pumpkin pie spice
1/2 tsp vanilla extract
Chopped walnuts or pecans, for topping
Make it
Whisk the pumpkin, milk, maple syrup, spice and vanilla until smooth.
Whisk in the chia seeds. Let it sit 5 minutes, then whisk again so the seeds don't clump.
Spoon into jars or glasses and chill at least 2 hours, or overnight.
Top with chopped nuts before serving.
Why it works. It tastes like pumpkin pie filling without the crust, sugar or cream. Chia sets it like a pudding and adds fiber.
Other options
1 cup mashed sweet potato or butternut squash instead of pumpkin
Unsweetened applesauce with cinnamon
Mashed berries (skip the pumpkin pie spice)
A ripe banana with 2 tbsp cocoa powder (skip the spice)
